Symptoms of Coeliac disease
There are multiple indicators for coeliac disease, however it is often very difficult to pinpoint as the cause due to the unique range of symptoms each individual experiences. Many of the symptoms can mimic or be very similar to other diseases, such as IBS (Irritable Bowel Syndrome) so in some cases it can take years to obtain an accurate diagnosis. Symptoms can range from severe to minor or atypical and may even go undetected.
Note symptoms can vary for each individual and can include one or a combination of the following:
· Weight loss(but not in all cases); it can be weight gain
· Recurrent gastrointestinal symptoms, such as nausea, vomiting and diarrhea
· Excessive flatulence, and/or constipation
· Fatigue, weakness and lethargy
· Persistent stomach pain, cramping or bloating
· Iron, vitamin B12 or folic acid deficiency
· Skin rash (dermatitis Herpetiformis, DH)
· Hair loss (alopecia)
· Mouth ulcers
· Depression and anxiety
· Tooth enamel problems
· Joint and/or bone pain
· Infertility or repeated miscarriages
· Neurological problems such as ataxia and neuropathy
Symptoms in babies and young children can also include:
· Bloated tummy
· Muscle wasting in the arms and legs
· Failure to gain or lose weight
So you may think your possible reaction to gluten may not be strong enough to warrant you to worry and get tested. A little bit of bloating here, mild swelling in the joints there – no big deal, just a little embarrassing… right? Wrong.
Over a period of time (say a few years) low levels of inflammation in the body start to add up. Even if you don’t experience any immediate negative effects from eating gluten (or your reactions are “tolerable”), you could be doing long term damage to your body. On average it takes approximately 13 years to diagnose someone with Coeliac disease.
Remember that this inflammation may be damaging the cells in your small intestine that are designed to absorb nutrients, which can leave you both fat and starving. Chronic inflammation anywhere in the body has full-body effects — chronic inflammation has even been discussed to the point that it has links to terminal illnesses such as cancer and heart disease. Every bite counts. So please go see your health practitioner if you suspect the culprit is gluten.

Gluten Free Fruit Mince
This recipe is gluten-free, wheat free, egg free and yeast free.
Serving size: 4 ½ cups
Cooking time: 15 Minutes
Combine raisins, sultanas, cherries, apricot, cranberries, mixed peel, currants, dates, jam, lemon juice, rum, sherry, brown sugar and mixed spice.
Transfer to an airtight container
Store in a cool dark place for at least a week
Stir occasionally to allow flavours to develop
You can replace dried pear with mixed peel if you prefer

Gluten Free Chocolate Eclairs
This recipe is gluten-free, wheat free and yeast free.
Preheat oven to 200C. Line a baking tray with baking paper
To make the pastry, heat the butter and sugar in a pan with water and bring to the boil. Add the flour and remove from the heat. Mix with a wooden spoon until a dough ball forms. Leave the mixture to cool for approximately 10-15 minutes.
Reserve 2 teaspoons of egg
When pastry is cool, beat in the eggs slowly until the dough is smooth and glossy.
Spoon the dough into a piping bag fitted with a 1cm plain nozzle.
Pipe 12cm long logs, 6cm apart, onto prepared baking trays.
Using a wet finger, rub the top of each log to get rid of any lumps and bumps.
Brush with reserved egg.
Bake in the preheated oven for 5 minutes, then reduce heat to 180C and bake for another 10 minutes until golden brown and puffed (if they are too pale they will go soggy so you may need to adjust time according to oven)
Using a small knife cute eclairs in half horizontally.
Return to oven, cut side up and bake for 5 minutes to dry out centres.
Repeat process with additional trays.
To make cream use an electric mixer and beat cream with vanilla essence and sugar (if using) until firm peaks.
Spoon mixture into a piping bag and pipe into the cooled eclairs.
To make the chocolate tops place butter and chocolate in saucepan and heat on medium-high for 1 to 2 minutes, stirring every 30 seconds or until melted.
Spread chocolate on tops and place over cream
Refrigerate for 20 minutes or until chocolate has set. Serve
