Almond Butter Bars
This recipe is Gluten Free, Wheat Free and Yeast Free
Serving Size: Serve 6+
Cooking Time: 35 minutes + Cooling
Grease 20cm X 20 cm baking pan with cooking spray
Chop sliced almonds and set aside with puffed rice
In a large non-stick saucepan, melt the butter over medium heat. Add the marshmallows and cook, stirring until melted. Add the almond butter and combine until smooth consistency. Remove the saucepan from the heat, add the puffed rice and chopped almonds. Stir until well coated.
Transfer mixture into pan. Using baking paper coated with cooking spray press down the mixture to flatten. Cool for 20 minutes.
Remove from baking tray and set on a rack over a sheet of baking paper. Place the chocolate chips into a microwave safe bowl and microwave in 5-10 second increments stirring until melted. Using a small spoon drizzle the chocolate over the square. Cool completely. Cut into six bars or more if preferred.
