Gluten Free Christmas Fudge

Gluten Free Christmas Fudge

This recipe is gluten-free, wheat free, egg free and yeast free.

Serving size: 52 pieces

Cooking time: 30 Minutes (plus 6 hours in fridge)

 

INGREDIENTS

395g can sweetened condensed milk
1 cup brown sugar
1Tbsp cream of tartar
125g butter, chopped
180g dark chocolate, finely chopped
½ cup fruit mince
1/3 cup dried cranberries
½ cup chopped dry-roasted hazelnuts

 

METHOD

Grease 4cm deep, 20cm square cake pan. Line with baking paper allowing an overhang on all sides

Place condensed milk, brown sugar, cream of tartar and butter in saucepan over low heat

Cook stirring until mixture thickens and comes away from sides of pan, approximately 6 to 8 minutes

Remove from heat

Stir in chocolate, fruit mince, cranberries and hazelnuts until combined and chocolate has melted

Spoon in to prepared tin and smooth top

Set aside for 30 minutes

Cover with plastic wrap and refrigerate for 6 hours or until firm

Remove from pan and cut into 2.5cm pieces

NOTE

You can buy fruit mince, however the ones I have seen are not gluten free, so remember to check the label, otherwise click on the link above to make your own fruit mince.
