Gluten Free Fruit Mince

This recipe is gluten-free, wheat free, egg free and yeast free.

Serving size: 4 ½ cups

Cooking time: 15 Minutes

INGREDIENTS
1 Cup raisins, chopped
1 Cup sultanas
½ Glace cherries, halved
¼ Cup dried apricots, diced
1 Cup dried cranberries
1/3 Cup dried pear
½ Cup currants
½ Cup pitted dried dates, chopped
1 Cup sweet jam/jelly/marmalade of choice
½ Cup white rum
¼ Cup sherry
1Tbsp lemon juice
½ Cup firmly packed brown sugar
2tsp mixed spice

 

METHOD

Combine raisins, sultanas, cherries, apricot, cranberries, mixed peel, currants, dates, jam, lemon juice, rum, sherry, brown sugar and mixed spice.

Transfer to an airtight container

Store in a cool dark place for at least a week

Stir occasionally to allow flavours to develop

NOTE

 

You can replace dried pear with mixed peel if you prefer
