Gluten Free Thermomix Lemon Coconut Balls

Coconut Lemon Balls

This recipe is gluten-free, wheat-free, dairy free, egg free and yeast-free.

INGREDIENTS

150g Almonds
320g Desiccated Coconut
120g Coconut Oil
170g Agave Syrup
2 Lemons
2tsp Vanilla Essence
2 pinches Himalayan salt

 

METHOD

Mill almonds into almond flour, 10 seconds/speed 9

Peel lemons and add to the TM bowl (removing pips) – Chop 10 seconds / speed 9

Scrape the sides of the bowl and add desiccated coconut.  Blend 2 seconds /speed 5

Add agave syrup, coconut oil and salt. Blend 5 seconds /speed 5.

Scrape down bowl. Blend 5 seconds / speed 5

Roll into balls and then into desiccated coconut

Store in airtight container in the fridge or freezer.

NOTE

You can substitute the Agave Syrup with Honey.
